4 side dish servings INGREDIENTS: 2 slices of bacon, cut into ½ inch pieces ½ medium red onion, diced 1 garlic clove, minced 1 tsp fresh thyme leaves 1 large bunch of swiss chard, washed and coarsely chopped Salt and pepper
Cook the bacon in a large skillet until crisp. Transfer to a small bowl.
Add the onion to the bacon drippings and saute until golden brown. Stir in garlic and thyme and cook until fragrant.
Add chard and saute until wilted. Season to taste with salt and pepper.
