INGREDIENTS: 4 cups canola oil 1 small eggplant, peeled ½ cup all-purpose flour 1 tsp dried basil and oregano 2 eggs, beaten ½ cup bread crumbs
INSTRUCTIONS: Heat oil to 350 degrees in a large pot. Cut eggplant into large steak fries. Whisk together flour, basil, oregano, and eggs. Toss eggplant in mixture then dredge in bread crumbs. Fry until brown, 2-3 minutes. Season with salt to taste.
